Chocolate & Banana Muffins
3 ripe bananas (about 500g with skin on)
125ml of coconut oil
2 large free range eggs
60g of coconut sugar
1/4 cup of pure maple syrup
225g of buckwheat or brown rice flour
3 tablespoons of raw cacao powder or cacao butter
2 tablespoons of desiccated coconut
Pre heat the oven to 200/gas mark 6 and line a muffin tray with muffin cases. Mash the bananas in a large bowl. Then add the melted coconut oil, coconut sugar and eggs. Mix the all the ingredients together until they are combined well. Then add the flour, cocoa powder and desiccated coconut. Stir until all the mixture is well combined. Spoon the mixture evenly into the muffin cases and cook in the centre of the oven for around 15/20 minutes. Check after 15 minutes, you don’t want to over cook these!
Store in an airtight container in the fridge.
