Lemon and Coconut Balls

Ingredients

100g of raw cashew nuts
6 Medjool dates
Zest of 1 lemon
2 tablespoons of desiccated coconut
1 tablespoon of white chia seeds
1 tablespoon of melted coconut oil

Method

These are absolutely delicious and incredibly simple.
Blitz all the ingredients together in a food processor until mixture is sticky. Try not to over blitz, maybe just pulse until sticky. Roll them into balls or pop into moulds/ice cube trays then put them in the fridge to chill. Snack on as and when…if they last that long! 😉
