Refined sugar free brownies
185g of unsalted butter (we like butter from grass fed cows)
185g of 80% cocoa solid dark chocolate (Lindt is our favourite)
85g of brown rice flour/buckwheat flour
40g of cocoa powder
50g of dark chocolate
50g of mixed nuts
3 large free range eggs
275g of coconut sugar
Pre heat the oven to gas mark 4 (350f).
Line a baking tray with grease proof paper.
Chop 85g of chocolate and put aside along with mixed nuts.
Melt the butter and 185g of dark chocolate in a bain-marie. Once melted set aside to cool. Whisk together the eggs and coconut sugar until they get really fluffy, this will take about 5 minutes. I use an electric mixer for this.
Once your eggy mixture is light and fluffy stir in the melted chocolate mixture. Mix together the dry ingredients in a separate bowl then gently fold into the chocolate mixture along with your remaining chocolate and nuts. Combine all the mixture together then pour in your lined baking tin. Pop in the centre of the oven and cook for around 25 minutes. Once cooled chop into squares and enjoy.
