Coconut & Sultana Bread


3 large ripe bananas (about 500g with skin on)
150g of coconut sugar
125g of soft unsalted butter (preferably by grass fed cows)
175g of brown rice flour or buckwheat flour
2 free range eggs
2 teaspoons of gluten free baking powder
100g of desiccated coconut
100g of sultanas

Tip; if you don’t like sultanas you can change them for 100g of mixed nuts or another type of dried fruit if you like.


Pre heat the oven to gas mark 4/170. Grease your loaf tin then line with a loaf liner or some baking paper. Mash the bananas in a bowl and put to the side. Melt your butter then wait for it to cool. Add your coconut sugar to cool melted butter along with your eggs and mashed bananas. Then fold in your flour, baking powder, coconut and sultanas until all ingredients are well combined.

Bake in the centre of your oven for about 45/50 minutes.

Store in an airtight container in the fridge.
