Courgetti and Prawn Omelette


3 large free range eggs
A handful of feta cheese
2 spiralized courgettes (or buy pre packed)
200g of king prawns
1 teaspoon of nut oil (or coconut oil)
Salt, pepper and herbs to taste


Pan fry the courgetti over a low heat for a bout 3-5 minutes, then add the prawns and feta, herbs and stir in. Pour over 3 beaten eggs and cook on low heat for a few minutes then transfer to the grill and cook until golden. Top with salad and serve.
